Shrimp Avacado Salad
1lb of cooked chopped shrimp
1 chopped or diced avocado
1 tsp of olive oil
1/3 cup of chopped red onion
1 tbsp chopped cilantro
Salt and pepper to taste
- First combine red onion, the juice of the 2 limes, olive oil and salt and pepper in a small bowl. Let it rest while you mix the rest of the ingredients in another bowl, it will mellow the strength of the red onion.
- In a large bowl mix the shrimp, avocado, and tomato.
- After the smaller bowl has rested for 5-10 minutes combine all ingredients, add the cilantro, and mix.
- Its ready to serve, enjoy.
*Spice it up with a few jalapeños, crushed red pepper, or whatever you like.
