Italian Tuna Salad

I probably make a tuna salad every week. I really like this recipe as a change of pace from more traditional tuna salad recipes.

Ingredients

2 cans of tuna – if its tuna in water, drain water and add 1 ½ tbs of olive oil.

  • If tuna is in olive oil, don’t drain.
  • Sometimes I like to use yellowfin tuna.

1 ½ cups of diced tomato drained.

¼ cup of chopped black olives.

¼ cup of chopped green olives without pimento.

½ cup of chopped parsley

¼ cup of chopped red onion.

½ of sweet yellow pepper

1 minced clove of garlic

1 tbs fresh lemon juice

½ cup of feta cheese

Dash of salt

Instructions

1.Empty cans of tuna in mixing bowl, if using yellowfin tuna – just barely break up the tuna as it will break up more when you mix the rest of the ingredients.

2. Add remaining ingredients and mix gently.

3. I generally serve it on butter lettuce or lettuce boat. It can also be served as a salad, or on a keto friendly wrap, tortilla, or bread.
