Hey everyone, thanks for checking in on my week 2 results. I continued with the keto diet and intermittent fasting.
For the most part I continued eating mostly a keto breakfast casserole, chicken salad, and tuna salad. I like making these meals because they are easy to whip up and will last me for a few days. If I must make a meal every time I want to eat, I’m not going to be able to stick with it. I will post some recipes that I enjoy soon.
I have been trying to find some kind of sweet tooth satisfaction that is keto friendly. I do not want to be kicked out of ketosis every time I want something sweet. I’m not really sure what happens when you eat something sugary or that puts you over the daily carb allowance. I will do some research on that and post what I find. I have tried some keto mug recipes, a peanut butter cup recipe, and one for blueberry muffins. The muffins were pretty good, but it does not quite satisfy that craving for sweets. I think the peanut butter cup and mug recipes may hold some promise but need to tweak the recipes I used and try again.
Again, trying to be fully transparent this week I bought what I thought were keto snacks to try out, but I later noticed they were just protein bars with like 30 grams of carbs each. I guess if that was the only carbs you ate for that day, you would still be ok. I doubt that was the case for me. I know I was looking in the keto snack area of the store but bought something else entirely. I will have to be more careful with what I buy from here on out.
Like I’ve already stated, I’m not an expert, doctor, or dietician, but I believe that most of my weight loss results thus far are from the intermittent fasting, and the elimination of soda pop from my diet. I’m hoping I can soon achieve ketosis and plan on buying some kind of test to verify that I am indeed in ketosis.
I would appreciate any comments from my fellow keto dieters, if they have a recipe for something sweet, they enjoy.
Lost 4 pounds this week, so I am down 9 pounds in two weeks. Still making progress and have room for improvement. Is anyone else having success they would like to share here? I’d be happy to hear about it.
